Doi Maach (Doi Fish) |
Ingredients:
- 6 medium size fish Aar or Bhetki
- 1½ tsp Turmeric Powder
- 3 big sliced Onion (medium sized)
- Salt to taste
- Garlic 4 pods (cut into pices)
- 1 tsp Ginger dry paste
- 4 tbsp Mustard Oil
- 4 Green Chilies
- 2 tbsp Yogurt
- 15 Kismis (raisins)
- 2 Tej Pata (bay leaf)
- ½ stick Darchini (Cinnamon)
- Green Cardamom ( Choto Elanch)
- 4 Cloves (Lobongo)
- 1 tsp Cumin Powder (Jeera Powder)
- 1 tsp Sugar
- 1 tsp Coriander Powder (Dhone Powder)
- 1 cup water

Step 1: Wash the slices fish, then add salt and 1½ tsp of turmeric
powder and mix and rub them overall and keep aside for 15 minutes.
Step 2: Heat the oil on a hot metal pan and add the fish and fry
well. After fry all fish keep them aside.

Step 4: Again heat oil in the pan and add raisins and tej pata. Then
add cloves, cinnamon, cardamom in the hot oil till them splutters, add the
ground paste garlic, onion and chillies. Stir if for 5 minutes. If dries up
then add a sprinkle of water. Now add turmeric powder, jeera powder and dhone
powder. Keep stirring at least 3 minutes.
Step 5: Now add 1 cup of water and mix well very carefully. Let it boil
gently. Now add sugar, chillies and salt to taste. When it comes to a boil,
then adds fish pieces and cover them on medium heat. Let cooking till the fish
gets cooked. Adjust sugar and salt according to your taste and serve hot with
fine rice.
