ELLOW RICE is a very delicious item.
This recipe is very easy to make.
It can be served with any meal.
Ingredients:

- 2 cups basmati rice
- 1 cup green peas
- 4 cups water
- 6 tbsp oil
- Pinch of hing (asafetida)
- 2 tsp cumin seed (jeera)
- 2 tsp mustard seed (rai)
- 4 bay leaves (tejpata)
- 8 whole red chilies
- 2 pcs. (1 inch) cinnamon sticks (dal chiini)
- 2 tsp salt adjust to taste
- 1 tsp turmeric
- ½ tsp cayenne pepper
Method:
- Wash the rice gently and soak it for at least 20 minutes before cooking.
- Rice expands about three times in volume after cooking, so use proper size rice pan.
- Drain the rice and put into the saucepan. Add green peas, water, 2 tsp of oil and salt, let the rice boil and turn the heat in low flame and cover the pan.
- Cook 20 minutes (approx) or until the rice is exact tender and evaporates the water. Turn off the heat and fluff the rice with a fork.
- Heat the oil in a non-stick pan on a medium heat. Add cumin seeds, mustard seeds and asafetida.
- After the seeds crack then add bay leaves, red chilies and cinnamon stick and stir for few seconds.
- Add rice, cayenne pepper and turmeric to the spices in the pan. Mix it very gently. Continue stir-fry for about 6 to 7 minutes.
- Serve hot with any soup, dal etc.
